30 Days! (Who moves a couple of days after Christmas?? These people)

Tonight dinner was simple. I was craving guacamole (even though I'd only had it once a few years ago) and I made it a point to pick up a couple of avocados from the market today because I was bound and determined to do SOMETHING with them..but mostly because I really wanted guacamole. I've never made it..I've never even cut an avocado before. I've seen it done..I can do it. Ya'll? I made the greatest guacamole *ever*. Simple..and good. Orion kept sneaking in to taste it (he said "oh man, this reminds me of my childhood!"..and anything I make that can bring memories like that out in a person? Awesome.)..the kids even loved it.


Then a random "hey, let's have chips and dip for dinner" came out and next thing I knew I was also whipping up some bean dip. Every once in a while, it's nice to do something totally different for dinner (even if it's something you wouldn't normally eat for dinner)..and it meant I wouldn't need to stand over a hot stove for 45 minutes tonight.

Even Calix loved it and that kid? Is impossible to please.

Sounds good to me! Sometimes I just make nachos for dinner, and all the kids love it.

Yummm! I love that last pic of Orion, mouth opened all huge and his eyes closed. You can so tell he's enjoying every bite!

Here's my recipe for yummy guac. I don't know if Orion likes the Tex-Mex kind, but this is great if you want to experiment some more.

3 avocados - peeled, pitted, and mashed
2 limes, juiced
1/2 tsp Cumin
1 tsp salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 tomatoes, diced
1 tsp minced garlic or a clove of garlic diced

You can add 1 pinch ground cayenne pepper or a chopped jalapeno for heat

Guess what you've made me hungry for now?
