05-02-09

Last night after dinner (vegetarian chicken parm), I wanted something sweet. Normally, a real fruit popsicle (30 cals) will do just dandy..but not this time. I was after chocolate in a fierce way. So after scouring the internet for my fix, I decided on Cream Filled Chocolate Cupcakes of which I'm not even going to bother adding a link to the recipe because the cake part wasn't that great..moist, but not chocolatey enough. Unless you have an awesome chocolate cake recipe that you're not sharing with me, it's best (and easiest) to just use a cake mix. The cream, however, goes like this:


1/4 cup butter
1/4 cup shortening
2 cups confectioners' sugar
1 pinch salt
3 tablespoons milk
1 teaspoon vanilla extract


In a large bowl, beat butter and shortening together until smooth. Blend in confectioners' sugar and pinch of salt. Gradually beat in 3 tablespoons milk and 1 teaspoon vanilla. beat until light and fluffy. Fill a pastry bag with a small tip. Push tip through bottom of paper liner to fill each cupcake.


And then I searched for a decent chocolate frosting..but I didn't want it fluffy, ya know? So I used this:


3/4 cup semisweet chocolate chips
3 tablespoons butter
1 tablespoon light corn syrup
1/4 teaspoon vanilla extract


In a double boiler over hot, but not boiling water, combine chocolate chips, butter and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.


The end result was this:





The swirls aren't perfect..the glaze didn't run down all the way, either. But I like it. They're not perfect and sterile looking. They say..come eat me. Nom.

Anyway, so the doctor yesterday. He gave me a prescription for vertigo pills for my inner ear infection..because not sleeping on my left side was really starting to irritate me and having my right arm be all tingly when I woke up wasn't fun. And also outer ear infection drops. Honestly? My right ear has been sensitive for years. Literally. Like it was sensitive even when I met Orion. He couldn't whisper in that ear or nibble on it or anything..it was like *twitch* no. So it's a little irritated in there. Not a huge infection or anything. Just a little irritated. So now I have drops for that one. Good times. My blood pressure was pretty okay. The top number was a little high at 158 and the bottom number was a sweet 76. And while that's not a perfect reading? It's way better than it's been in a very long time. Like..since Calix was in utero kind of long time. So I am not complaining one bit.



Now I'm off to get dressed as I have an eye doctor's appointment this morning. We're trying to find contacts my eyes want to be friends with because so far? The 3 brands of contacts I've tried this month dry out in like..an hour or two and I end up pulling them out of my eyes because it's annoying and makes me feel tired. My eyes have randomly decided to be high maintenance blizzotches and I shake my fist at them. Dang you, eyeballs!

I thought exactly that about the cupcakes: they don't have that sterile mass-produced look. They look friendly and ... willing. :o)

Those cupcakes are scrumptious looking! Now you have to eat them all by yourself? What a pity.
